Vegan Poke Bowl

This version of the popular poke bowl is packed full of fresh vibrant ingredients, with marinated tofu for a protein boost and grilled pineapple for a tropical Hawaiian twist. These quick and easy bowls make for a healthy and delicious lunch or dinner.

Ingredients, Serves 2

250g sushi rice, cooked
1 block of firm tofu, chopped into squares
1 cup. edamame beans
1 avocado, sliced
2 medium carrots, peeled
2-3 Spring onion, chopped

For the Tofu Marinade
¼ cup tamari
3 tbsp. pineapple juice
2 tbsp. Vita Coco coconut oil
1 tbsp. maple syrup
1 tbsp. grated ginger
Squeeze of lime
Additional coconut oil for frying

To Serve
Black sesame seeds


For the Tofu

Stir together the ingredients for the marinade in a shallow dish. Add in the tofu and
marinate for 20-30 minutes.

Once the tofu has marinated for 20-30 minutes, heat 1-2 tbsp. coconut oil in a non-stick frying pan,
then add in the tofu and remaining marinade. Cook until the marinade has thickened and the tofu is glazed.

To Serve

Divide the rice and vegetables between two bowls and garnish with a sprinkling of black sesame seeds and splash of tamari.
Top with the warm tofu.
