These tropical breakfast jars make the perfect healthy spring/summer breakfast.
Packed full of coconut, mango and pineapple this is a fruity and delicious way to
start the day. When you're short on time just prep the night before for a yummy
breakfast on the go.
¼ cup. chia seeds
1 cup. Vita Coco coconut milk
2 tbsp. desiccated coconut
1 tsp. vanilla bean paste
1 fresh mango
1 cup. pineapple
Handful of banana chips
Handful of coconut chips
2 x passion fruits
Put all of the ingredients for the chia pudding into a jar/or bowl and stir well.
Allow to sit for 15 minutes before stirring again.
Place in the fridge and leave overnight (or for at least 2 hours)
Put the mango and pineapple into a blender and blend until smooth.
Divide the chia pudding between two glasses, and then pour the tropical puree on top of the chia puddings. Top with banana chips, coconut flakes, passion fruit and fresh mint.
