Sweet, creamy and delicious, this toffee apple oatmeal is perfect for fall. Loaded with cinnamon, maple syrup and apple these oats are perfect for anyone with a sweet tooth.
Ingredients, Serves 2
1 ½ cup oats
3 cups Vita Coco coconut milk (use regular if you want it super creamy)
2 tbsp flaxseed
1-2 tbsp maple syrup, optional
1 tsp cinnamon
For the Toffee Apple
1 large apple, sliced
1 tbsp. Vita Coco coconut oil
4 tbsp. maple syrup
A splash of water
Other Toppings
Chopped pecans
Coconut yoghurt
Instructions
To make the oatmeal, heat the milk in a saucepan over a medium heat and then add in the cinnamon, oats and maple syrup if using. Stir frequently to prevent sticking, and cook for 10-15 minutes until thick and creamy.
For the Toffee Apple
In a large frying pan, heat the coconut oil, maple syrup and splash of water. Once bubbling, add in the sliced apple and cook for 5-10 minutes until soft.
Divide the oatmeal between two bowls and top with the toffee apple, pecans and coconut yoghurt.
