Toffee Apple Cheesecake Pots


These tasty little no bake cheesecake pots are a great for a quick and easy dessert without compromising on taste. Made with sticky toffee apple, a sweet cashew cream and an apple infused base, these pots are best served in little glasses so you can appreciate each of the layers.


Ingredients, Makes 4
 
Base
 
½ cup oat flour
¼ cup oats
2 tbsp fresh apple juice
1 tbsp Vita Coco coconut oil, room temperature
1 tbsp coconut sugar
½ tsp cinnamon

Middle
 
1 cup cashews
¼ cup Vita Coco coconut milk
2 tbsp Vita Coco coconut oil, room temperature
2 tbsp cacao butter
2 tbsp maple syrup
1 tbsp lemon juice
 
Topping

10 medjool dates, destoned
½ cup water
1 tbsp Vita Coco coconut oil, room temperature
1 tbsp coconut sugar
1 apple, chopped


Instructions
 
For the base, put all of the ingredients into a mixing bowl and stir together. Divide the mixture into 4 and press tightly into the bottom of each glass. Put in the fridge whilst making the filling.

For the filling, put all of the ingredients into a blender and blend until smooth and creamy. Divide the filling between the 4 glasses and return to the fridge to firm up whilst making the topping.

For the topping, put ½ of the apple and the rest of the ingredients into a food processor and process until a thick caramel has formed. Pour the 'toffee' into a bowl and stir in the rest of the chopped apple. Divide the toffee apple between the 4 glasses.

Store in the fridge until ready to serve
