Nothing says summer quite like strawberries and cream, and what better way to enjoy these British flavours than in a smooth and creamy ice cream. As well as being dreamy and delicious, this recipe is vegan, gluten & refined sugar free, making it suitable for almost everyone to enjoy!
3 cups frozen strawberries
1 ½ cup Vita Coco coconut milk
½ cup cashew butter
¼ cup oat flour
¼ cup maple syrup
1 tsp. Vanilla bean paste
Place all of the ingredients for the ice cream into a high powered blender and blend on a low setting until smooth.
Set to one side for approx. 10 minutes and allow to thicken slightly.
Once the mixture has thickened, pour into your ice cream maker. Churn for 20-30 minutes, or until your ice cream has firmed up, then place into a container and freeze for a minimum of 2 hours before eating.
Remove the ice cream 5 minutes before eating to make it easier to scoop.
