If you follow our Instagram feed (@squarevisionblog), you’ll know that last weekend we visited the Foodies Festival at Tatton Park. Of all of the food on offer – and there was lots! – we were really looking forward to trying Vita Coco’s coconut oil popcorn. Unfortunately by the time we arrived it had all gone – clearly a popular choice! Not wanting to miss out, we decided to recreate the recipe at home using Vita Coco’s Organic Coconut Oil, adding a few of our own twists.
- 2 tbsp Vita Coco Coconut Oil
- 2 tbsp popping corn kernels
- 50g sugar
- ½ a lime
- In a large pot with a tight lid, melt half the coconut oil on a medium heat and add a couple of corn kernels. As soon as the first one pops, add the rest of them and turn down to a low heat. Place the lid on the pan and wait for the next few minutes as all of the corn begins to pop. When the popping becomes less frequent, turn off the heat and carefully remove the pan’s lid.
- In a bowl, combine the remaining coconut oil with the sugar and lime juice. Pour the mixture over the popcorn, and mix thoroughly.
And that’s it!
As the coconut and lime flavour is nicely subtle, you could add other flavours that you like too. We drizzled some chocolate spread over one bowlful which was soooo good! Let us know what combinations you try.
