Step into summer with bright and colourful salads, like these rainbow noodles with
coconut ranch dressing. Packed full of raw crunchy spiralized veggies and a creamy
delicious dressing this noodle bowl will make lunch time a whole lot more fun.
Rainbow Noodle Salad
1 large carrot, peeled
2 medium beetroots, peeled
1 large courgette
1 cup. fresh peas
1 avocado, sliced
Coconut Ranch Dressing
1 cup roasted cashew nuts
¾ cup Vita Coco coconut water
1 tsp. onion powder
1 tsp. garlic powder
Salt, to taste
To make the dressing, put all of the dressing ingredients into a blender and blend until smooth and creamy. Set to one side whilst you made the salad.
Use the veggie blast to spiralize the carrot, beetroot and courgette, one by one.
Divide the noodles between two bowls, along with the peas and sliced avocado.To
serve, add fresh basil and coconut ranch dressing.
