Open Sri Lankan Jackfruit Curry

Comforting and delicious, this healthy Sri Lankan jackfruit curry is perfect for cold winter nights. It's packed full of flavour and spice, making it especially warming.
Ingredients, Serves 2-4 
1 onion, chopped 
3 garlic cloves, minced 
1 tbsp Vita Coco coconut oil 
1 tsp Sri Lankan spice mix 
½ tsp turmeric 
½ tsp cinnamon 
½ tsp – 1 tsp chilli flakes 
Squeeze of fresh lime 
2 x 400g tin of jackfruit pieces, drained 
3 cups tomatoes, pureed (you can use fresh/ or canned) 
1 ½ cup Vita Coco coconut milk 
1 tbsp coconut sugar 
½ tsp salt, to taste 
¼ tsp pepper, to taste 
To Serve 
Veggies of choice 
Fresh chillies 

Heat the coconut oil in a large pan and cook the onion until translucent. Add in the garlic, spices and lime juice and fry for a couple more minutes. 
Add the jackfruit into the pan along with the pureed tomatoes, coconut milk and sugar. Bring to the boil and then cook for 25 minutes until thick and creamy. Shred the jackfruit using a fork and cook for a further 5 minutes. Taste, and add additional salt/pepper if needed. 
Serve the curried jackfruit with rice, veggies, lime, coriander and fresh chilli.
