This cool and refreshing minty matcha shake is perfect for a mid-morning pick me up or post work out refreshment.
1 cup Vita Coco coconut milk (regular or light)
2 ripe bananas
2 tsp. matcha
12 fresh mint leaves
2 x handful of spinach
2 tbsp. maple syrup
Handful of ice
Sprinkling of matcha
Place all of the ingredients for the matcha mint shake into a blender and blend until smooth and frothy.
Divide between two glasses and top with soy whip, fresh mint and a sprinkling of matcha
