These muffins are a high energy snack perfect for an on the go lifestyle!
3 Tbsp chia seeds
8 TBsp coconut milk
175g oat flour
75g self raising flour
½ tsp baking powder
¼ tsp bicarbonate soda
Pinch of salt
4 TBsp coconut oil
200ml coconut milk
2 tbsp maple syrup
Zest of 1 lemon
Preheat oven to Heat oven to 180C fan/gas 6
Start by mixing the chia seeds and 8tbs of coconut milk In a small bowl and leave for 5/ 10 minutes to thicken up and resemble an egg like consistency.
Meanwhile 12 muffins cases in a muffin tin and melt the coconut oil in a pan.
In a food processor, add the banana and blitz for a few seconds until mashed. Then add the rest of the ingredients except the blueberries and blitz’s Until smooth.
fill the muffin cases ¾ way up with the batter and then top each muffin with a few blueberries, pushing them in a little and Bake for 25- 30 mins until risen and golden. Leave to cool in the tin.
