Decadent Chocolate and Chestnut Bars


Chocolate chestnut bars that are decadent and delicious! With a chocolatey base made from oats and almonds, the creamiest chestnut filling and a drizzle of dark chocolate, these bars are real treat.

Ingredients, Makes 6
 
Base
 
1 ½ cup oat flour
¾ cup ground almonds
¼ cup maple syrup
1 tbsp cacao powder
1 tbsp Vita Coco coconut oil, room temperature

Chestnut Filling
 
200g cooked chestnuts
¼ cup + 2 tbsp Vita Coco coconut oil, room temperature
¼ cup maple syrup
1 tsp vanilla bean syrup

Chocolate Drizzle
 
100g good quality dark chocolate, melted

Instructions
 
Line a square baking tin (9x9) with baking paper and set to one side

Put all of the ingredients for the base into to a food processor and process until it binds together. Using you hands, press the mixture tightly into half of the lined tin and then place in the freezer whilst you make the chestnut filling.

For the chestnut filling, put all of the ingredients into a blender and blend until thick and creamy. Spread the chestnut filling evenly over the base, then return to the freezer to firm up.

Remove the chestnut bars from the freezer and slice into 6 pieces. Drizzle the melted chocolate over each of the bars and then place in the fridge to set.

Store in an air tight container in the fridge for up to a week, or store in the freezer.
