This coconut laska is creamy, delicious and ideal for nourishing week night meals when you're short on time. It's cosy, comforting and is especially good when it's chilly out!
Ingredients, Serves 4
1 tbsp Vita Coco coconut oil
½ cup laksa paste
1 cup Vita Coco coconut milk
1 cup coconut cream
1 vegetable stock cube
200g tender stem broccoli
2 carrots, julienned
1 courgette, julienned
280g firm tofu, chopped
½ pack of 225g instant rice noodles
Spring onion, chopped
Heat the coconut oil in a large pan and fry the laksa paste for a few minutes
Add in the coconut milk, coconut cream and stock cube and bring to the boil. Add in the broccoli and cook for 5-10 minutes.
Once the broccoli is cooked, add in the tofu, courgette and carrot and cook for a further 5 minutes.
Meanwhile cook your rice noodles as per instructions on the back of the packet. Once cooked, tip the noodles into the pan.
Season to taste before serving in a bowl topped with spring onions and chilli flakes (optional)
