Coconut French Toast

Take breakfast to the next level with this thick and fluffy stack of French toast coated in toasted coconut. Sweet, delicious and coconutty this French toast is worth the extra effort in the morning!

Ingredients, Serves 2

French Toast

¾ cup. Vita Coco coconut milk - light or full
¼ cup. maple syrup
¾ cup. desiccated coconut
2 tbsp. plain flour
1 tsp. vanilla
6 x pieces of stale bread


1 cup. frozen raspberries
1-2 tbsp. maple syrup


Dairy-free yoghurt
Sliced apple
Maple syrup


Put the stale bread to one side and mix together the rest of the ingredients in a
shallow dish until well they are well combined

Put the desiccated coconut onto a plate and have your mixture next to the frying pan
for ease.

Heat a little coconut oil in your pan over a medium heat.

Dip the slices of bread into the mixture then coat in the desiccated coconut. Put
straight into the pan and fry for a couple of minutes on each side until crispy. Repeat
this step with the rest of the slices.

Serve with compote, fruit, maple syrup and yoghurt


Warm the raspberries with the maple syrup either in a small pan over the hob or
in the microwave for a couple of minutes. Once warm, mash the raspberries into thick compote.
