Back To School Chocolate Breakfast Cookies

Cookies for breakfast? Yes please! Made from healthy ingredients such as oats, almond butter, coconut oil, raspberries and coconut, these cookies make the best back to school brekkie! So much so you'll be wanting to bake these every day of the week.  

Ingredients, makes 6

1 cup oat flour
¼ cup cacao powder
¼ cup tapioca starch
½ cup almond butter
¼ cup Vita Coco coconut oil + 2 tbsp
¼ cup maple syrup
½ tsp baking soda

Add ins:

2 tbsp. dried raspberries
2 tbsp. oats
2 tbsp. dessicated coconut
2 tbsp. chocolate chips (optional)
Pre heat the oven to 180c and line a large baking tray with baking paper
Put the oat flour, cacao powder, tapioca starch and baking soda into a large mixing bowl
Mix together the almond butter, coconut oil and maple syrup in a jug, then pour into the mixing bowl and combine
Once combined stir in the add ins
Roll ¼ cup cookie dough in a ball and place on the baking tray. Press flat with your hand and repeat with the rest of the cookie dough, making sure to leave enough space between each cookie
Bake in the oven for 15 minutes, then remove from the oven and allow to cool before removing from the tray
