It's ice lolly season and we are LOVING these Chocolate Avocado Lime Pops made by @samanthahadadi. An afternoon snack that not only tastes good, but does good... It's a yes from us!
2 ripe avocados, pitted
4 tbsp coconut cream
8-12 tbsp Vita Coco coconut milk
Juice 2-3 limes
Zest 1 lime
3 tbsp maple syrup or sweetener of choice
1 tsp vanilla paste
1 tsp agar agar (optional but helps to keep a creamy texture)
To coat -
80g dark chocolate
1tbsp Vita Coco coconut oil
2 tbsp chopped hazelnuts, to sprinkle (optional)
1) Place all ingredients into a high-powered blender and blitz until completely smooth, adding a splash more coconut milk if needed to loosen slightly. Pour into ice cream moulds and place in the freezer to set overnight.
2) Remove from the moulds, then melt your chocolate with the coconut oil in a bain marie. Dunk each ice cream into the chocolate and sprinkle with topped nuts, if using. Lie on baking paper to firm up (around 1 minute), then eat immediately or place back in the freezer for later eating!
