Carrot Cake Overnight Oats are a great spin on the old classic carrot cake and acceptable for breakfast time too! What better way to start the day than a nourishing and perfectly spiced bowl of coconutty and raisin-filled goodness.
INGREDIENTS
1 ripe banana- mashed Tsp mixed spice Handful raisins
1 cup jumbo oats
Tbsp maple syrup Handful chopped pecan nuts 1 cup Vita Coco Coconut milk 1 medium carrot- grated
INSTRUCTIONS
Combine all of the ingredients in a mixing bowl and stir everything together.
Pop this into the fridge for a few hours, or overnight to allow the mixture to thicken. Serve with toppings of choice or transfer into a tupperware to take on the go with you.
