If you’re in need of a healthy snack or sweet treat, these carrot cake bites are the answer. Lighter than your usual energy ball these bites are soft, cakey and delicious – just like little bites of carrot cake, with the added bonus that they can be made in minutes!
2/3 cup. oats
1/3 coconut flour
1 medium carrot, grated (approx. 1 cup)
1/4 cup. cashew butter
6 medjool dates, destined
2 tbsp. Vita Coco coconut oil, melted
1 tsp. cinnamon
1/2 tsp. ginger
1 tsp. Vanilla
Desiccated coconut (optional)
Put all of the ingredients into a food processor and process until a dough forms and it can be easily be rolled into balls. If the mixture is too dry, add in a tbsp. or two of water. If the mixture is too wet, add in a tbsp. or two of oats.
Roll the mixture into balls (approx. 20g per ball) and roll in desiccated coconut if using. Store in an airtight container in the fridge.
