Have some fun with these blueberry and coconut popsicles and make them different shades of purple. These easy-to-make ombre treats are perfect for beating the summer heat.
Ingredients (Makes 10 – depending on your mould size):
1 cup Vita Coco coconut milk
1 cup coconut yoghurt
¼ cup maple syrup
1 cup frozen blueberries
1 tsp. vanilla bean paste
Put the coconut milk, yoghurt and maple syrup into a blender along with 2 tbsp. frozen blueberries*. Blend until smooth and then fill two of the ice lolly moulds.
Add another 2 tbsp. of frozen blueberries to the blender. Blend until smooth and then add to two ice lolly moulds.
Repeat the above step with the rest of the frozen blueberries to achieve the ombre effect. As more blueberries are added the popsicles will be a more vibrant purple.
Once all of the ice lolly moulds are filled, put the lid on and add in the popsicle sticks.
Place in the freezer and freeze overnight.
* If you do not wish to make the ombre effect you can add all of the blueberries in at this stage
