Blueberry Pancakes

For a slightly sweet twist on your classic pancake recipe.

Let’s face it: everyone loves pancakes! If we didn’t, there wouldn’t be an International House of them! But, sometimes they’re a little dense—and, without syrup or your favorite mix-ins, they can be a little bland.

That’s where we come in! Adding Vita Coco Coconut Oil to your pancakes is the easiest way to fluff up your standard pancake recipe! It’ll add a new flavor that will make you and your family smile. We promise you: one taste of this recipe, and you won’t go back to the original!


  • 1 egg
  • 1 cup of buttermilk
  • 2 tbsp. of Vita Coco Coconut Oil
  • 1 cup of flour
  • 1 tbsp. of sugar
  • 1 tsp. baking soda
  • 1/2 tsp. of salt
  • 1 cup of blueberries


  1. Crack and beat egg in a medium-sized mixing bowl.
  2. Add remaining ingredients, in order, and whisk until smooth.
  3. Fold in blueberries.
  4. Grease griddle with 1/2 tbsp of butter, and heat over medium-high heat.
  5. Once the griddle is hot, scoop by the spoonful onto griddle. Cook on one side until bubbles start to form, and then flip.
  6. Cook until golden brown.
  7. Serve hot, and enjoy!
