Blackberry and Apple Breakfast Muffins

Fluffy blackberry and apple breakfast muffins with a hint of cinnamon, perfect for a healthy and delicious breakfast on the go or as an afternoon pick me up. Don't have blackberries? Swap them out for raspberries or blueberries instead.

Ingredients, Makes 7
1 ½ cups self raising gluten-free flour
1 cup unsweetened apple puree 
½ cup of Vita Coco coconut milk
¼ cup + 2 tbsp maple syrup
¼ cup of Vita Coco coconut oil 
1/2 cup fresh blackberries 
1 grated apple
1 tsp. baking powder
1 tsp. cinnamon
4 tbsp. coconut butter, melted
2 tbsp. maple syrup
2 tbsp. Vita Coco coconut oil, melted

Pre heat the oven to 180c and prepare a muffin tray with 7 cases
Put the flour, baking powder and cinnamon into a large mixing bowl and set to one side
In a large jug, combine the apple puree, coconut milk, maple syrup and coconut oil and then pour into the mixing bowl
Stir gently until all the ingredients are combined, then stir in the fresh blackberries and grated apple
Divide the mixture between 7 muffin cases, then put in the oven to bake for 30 minutes, or until cooked through

For the drizzle, stir together all of the ingredients in a small bowl until combined. Once thickened, drizzle over the muffins and enjoy!
