We're heading into Summer and what better way to cool down than with an
ice cream bar bursting with summer berries. With ice cream that's smooth, creamy
and totally delicious, you’ll never know these bars are dairy-free!
1 cup. oats
2 tbsp. flaxseed
1 cup. cashews
1/4 cup Vita Coco coconut oil
1 tbsp. maple syrup
2 frozen bananas
1 cup frozen berries
1/2 Vita Coco coconut milk
1 tbsp. cashew butter
Handful of fresh berries
Strawberry puree (1 cup blended strawberries)
Put all of the ingredients for the base into a food processor and process until a sticky
crust forms. Put the crust into lined loaf pan and press down flat, then place into the
freezer to harden.
Put all of the ingredients into a high-speed blender and blend until thick and
creamy, but be careful not to over blend. Spread on top of the base th
en top with the fresh berries and strawberry puree. Return to the freezer to harden.
Remove from the freezer 5 minutes before hand and cut into bars. Serve with
addition berries and fresh mint if desired.
