Banana Nut Muffins

These muffins will have you going bananas (and a little nuts).

Okay, let’s be real: muffins are kind of considered the lame, healthier cousin of the cupcake. But hear us out! Muffins are actually full of potential (and a lot of the time, butter)!

Trading your butter or butter-equivalent for Vita Coco Coconut Oil will not only make for a healthier muffin, but it’ll add a certain je ne sais quois that you won’t be able to get enough of. Let us help you give your muffins a makeover and turn them into that cousin that everyone loves!


  • 1/2 cup Vita Coco Coconut Oil
  • 1 cup mashed bananas
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup flour
  • 1/2 tbsp baking powder
  • pinch of salt


  1. Preheat your oven to 375℉.
  2. Whisk together bananas, oil, sugar, and egg until smooth.
  3. In a separate bowl, mix together flour, baking powder, and salt.
  4. Add banana mixture to dry ingredients and whisk together until well-combined.
  5. Scoop mixture into a greased muffin tin, filling each cup 2/3 full.
  6. Bake for 12 minutes or until golden brown. Cool, and enjoy!
