Baked Carrot Cake Oats

This baked carrot cake oatmeal is a warm and cosy breakfast that's perfect for crisp autumnal mornings. Serve with a generous helping of coconut yoghurt, walnuts and a glug of maple syrup for a real treat – it's almost like eating cake for brekkie!

Ingredients, Serves 3
1 ½ cup oats
1 ½ cup Vita Coco coconut milk
2 carrots, grated
3 tbsp coconut sugar
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
½ tsp baking powder
A handful of raisons
A handful of walnuts, chopped

To Serve (optional)
Coconut yoghurt
Maple syrup

Pre heat the oven to 180c
In a large mixing bowl, stir together all of the ingredients and divide between 3 ramekins
Put the oven and bake for 30 minutes
Remove from the oven and serve with coconut yoghurt, walnuts and maple syrup
Baked oatmeal can be eaten cold, but it's best served warm straight from the oven
