Maple, garlic and chilli roasted sprouts


You may think you hate Brusell sprouts, but have you tried them roasted? Tossed in coconut oil, garlic and chilli roasting the sprouts completely transfers them into golden and crispy wonders. They’re actually very moreish unlike like boiled sprouts and make a delicious addition to any Christmas meal. As they have a very savoury taste the maple syrup pairs with them nicely and brings just the right amount of sweetness to this dish.

(Serves 6-8 as a side dish)
1kg Brussel sprouts, peeled
2 tbsp. Vita Coco coconut oil, melted
1 bulb of garlic
1 tbsp. maple syrup
Squeeze of 1 lime
Chilli (optional) 


Peel the sprouts, and then place into a bowl and toss with the melted coconut oil
Place on a lined baking tray along with the garlic
Put in the oven to roast for 35-40 minutes, turning the sprouts half way through
Once crispy on the edges remove from the oven and drizzle over the maple syrup and lime juice
