Creamy Coconut Porridge (with Caramelized Banana)


There’s nothing better than a warm, comforting bowl of porridge to start the day with. Packed full of fibre and deliciousness, this creamy coconut bowl is sure to brighten up any winter morning. Not only is it completely rich and creamy, it’s nourishing too. You can top this porridge with toppings of your choice, of course, but these chewy caramelized bananas are really not to be missed. 

(1 serving)
¾ cup oats
1 ½ cups Vita Coco coconut milk light
1 tbsp. flaxseed
1 tbsp. cashew butter
1 tbsp. chia seeds
Pinch of salt

Toppings
 
Caramelized Banana
2 bananas, halved
1 tbsp. Vita Coco coconut oil
1 tbsp. maple syrup
 
Other
Handful of fresh blueberries
Sprinkling of cacao nibs
Sprinkling of pumpkin seeds 


Instructions
Put the oats and coconut milk into a small pan, and place on the hob over a medium heat and bring to the boil
Once boiling, reduce the heat and continue to cook until the porridge has reached the desired consistency
Stir in the cashew butter, flax and chia seed before pouring into a bowl of your choice

For the Caramelized Banana
Heat the coconut oil and maple syrup in a frying pan
Once sizzling put the banana halves into the pan and fry for 2 minutes on each side 
Remove from the pan, and serve immediately on top of the porridge with the rest of the toppings
