Paleo Pumpkin Pie Bites

Ahhh, Thanksgiving--the time of year where we eat everything--and then regret everything. make this dessert!

Okay, so maybe that was a bit of exaggeration; this dessert isn't a cure-all for those post-meal woes. But, it's one thing that you can feel better about eating! Lighter ingredients and healthier options make these adorable mini pumpkin pies as easy on the stomach as they are on the eyes! That way, you can feel a little less guilty when you indulge in one or two (or twelve--don't worry, we won't tell anyone)!

For the Crust:
  • 2 cups almond flour
  • 1 egg
  • 2 tbs maple syrup
  • 2 tbs Vita Coco Coconut Oil
  • pinch of salt 

For the Filling:
  • ¼ cup Vita Coco Coconutmilk
  • ½ cup organic pumpkin purée
  • ½ cup coconut sugar
  • 2 eggs
  • ½ teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • pinch of salt 

  • Preheat the oven to 350 degrees F.
  • In a food processor or mixer, blend together the crust ingredients until a dough forms. Place a small ball of dough into a greased muffin tin, pressing until an even layer forms around the bottom and sides of each cavity. Repeat until you've used up all of your dough.
  • In a food processor or mixer, blend the filling ingredients until smooth. Pour the mixture into each hole and place into the oven.
  • Bake for 30 minutes, or until the pies are set. Place into the fridge for at least 30 minutes.
  • Serve topped with coconut whipped cream!
