Looking for a summer spritzer that is equal parts delicious and hydrating? We have you covered. This Coconut Watermelon Spritzer recipe is great for picnics, BBQs and potlucks alike. The best part is that it’s super simple to make and doesn't include any added sugar thanks to the naturally sweet coconut water --just 4 basic ingredients that you probably already have at home. Cheers!
1 Can of Vita Coco Pineapple Passionfruit Sparkling Coconut Water
4 Cups of Chopped Watermelon (preferably refrigerated so that the beverage is cold)
Juice of 1 Lime
2-4 Mint Leaves
Optional: Coconut Rum
Blend chopped watermelon, lime juice, and 2 mint leaves.
Grab 2-3 cups. Pour watermelon mixture into each cup until they are all about ¾ full (you want to leave room to add the sparkling coconut water). Top each glass off with ice-cold Vita Coco Sparkling coconut water and stir.
If the Sparkling and Watermelon are not cold, add ice to cool beverage. Here is where you add the rum if desired (about .5 to 1 ounce in each glass). Decorate with extra lime and mint leaves. Enjoy!
