Golden Milk Overnight Oats by Kaleigh McMordie

• 1 Cup Vita Coco Coconutmilk 
• 1/2 Tsp Ground Ginger
• 1/2 Tsp Ground Turmeric
• 1/4 Tsp Ground Cinnamon
• 1/2 Tsp Honey
• 1/3 Cup Rolled Oats
• 1 Tbsp Chia Seeds

In a small saucepan, whisk coconut milk, spices and honey, bringing it to a boil. Add oats and chia seeds, stirring occasionally and turn heat down to low. Cook until the oats have absorbed the liquid. Once absorbed, let it cool for an hour, and then chill overnight.

I make sure to always start my day with a filling breakfast that contains protein, whole grains, and healthy fat to keep me energized for hours. My favorite weekday breakfast is oatmeal, and overnight oats, convenient for busy mornings!
